Hollie grew up in the English countryside which saw the birth of her passion for food and fine wine. After travelling through Europe and Asia her palate and appetite for the finest cuisine grew, and has continued to do so long after settling her feet in Sydney. Where she took up the restaurant manager position at the Windsor. With an affection for fine dining and her welcome nature and strive for excellence, Hollie has been welcomed by many of our loyal customers.
